What do I do if someone says they do not believe in God, the Bible, or life after death?

If they will allow you, continue to share the Word of God with them.  This is important for two reasons:

#1: Sometimes people merely “say” they do not believe something without really meaning it.  If they are willing to listen to the Word of God - by all means, share it with them.

#2: (And most importantly) The Holy Spirit can convict them and convince them that the Message you are sharing is true (John 16:8).  So, prayerfully share the Word of God.   Ask God to work in their heart to reveal Himself to them.

It is also helpful to remind the individual that saying you do not believe in something does not negate reality.  For example, you can jump off the top of a 100-story building and say that you do not believe in gravity; however, that will not stop the fact that you will shortly reap the results of violating the law of gravity.  Likewise a person can say they do not believe in God, the Bible, etc.; however, that will not stop the fact that they will shortly reap the results of violating the law of God—eternal destruction in the Lake of Fire.  Encourage them to give earnest attention to the Message you are sharing with them.  Then, pray for them and continually show them the love of Jesus—sharing the Gospel every chance you get.
